South Tyrol is a small country. But South Tyrol is a country of real pleasures. In the course of many years strange things have happened to the cuisine of this northern area right behind the Brennero/Brenner, where Italy begins but Tyrol is nevertheless not finished yet. Two completely different attitudes towards cooking have met. On the one hand the light tradition of Italy with pasta, fish, polenta and gnocchi, on the other the more substantial Tyrolean style with “Knödel” (some sort of dumplings), “Krapfen” (sweat pastry filled with various types of jam), soups and “Speck” (smoked ham). Obviously, “Knödel” and spaghetti are not served together, but the two have managed to enter an impressive co-existence. Whatever braises, fries, cooks and simmers in today’s South Tyrolean pots and pans spoils the palate. Because the South Tyrolean cuisine is honest, it is still traditional and has just improved through the influence of the Southern, more playful style. In this way the former food of the poor people has been raised to noble pleasures. We are proud of that and love serving it.
